Appetizer sales rose 33% in 2025 while desserts dipped 2%, and economists are taking note. Buyer's Edge offers two theories: diners are trading down from entrées to save money (the "Mozzarella Stick Index"), or GLP-1 weight-loss drugs are shrinking appetites enough to skip dessert, but not the urge for something hot and fried.

Those in food, hospitality, or CPG should beware; the appetizer section has become the main. The American dinner table is being restructured in real time.
